What’s Working, What Isn’t and What Comes Next About AI in Hospitality
Where is AI delivering real value in hospitality—and what should hotels focus on next?
The session will open with a presentation by Benjamin Jost, CEO & Co-Founder of TrustYou and Chair of HSMAI Europe’s AI Advisory Board, exploring what is working, where challenges remain and what could come next.
Followed by a discussion, bringing different perspectives on putting AI into practice, assessing its commercial value and deciding where to focus next.

Panel: Full Tables, Thin Margins — Is F&B Revenue Management Asking the Wrong Question?
Led by Michael Nowlis, Educator & Author with a great knowledge of the French market. He is also the Chair of the HSMAI Europe Board of Directors.
A busy restaurant does not always mean a profitable one. What needs to change?
This panel will explore how hotels and restaurants can improve F&B profitability while protecting the guest experience. From pricing for peak and quieter periods to attracting the right business, the discussion will challenge assumptions about what successful F&B performance looks like.
The debate will explore:
- Pricing and profitability: Should restaurants price like hotel rooms—and would guests accept it?
- Ownership and collaboration: Who should lead F&B revenue management, and how should F&B and commercial teams work together?
- AI, predictive intelligence and human judgement: Where can better forecasting improve decisions?
- The guest experience: When do table time limits, deposits and minimum spend put loyalty at risk?
- Who owns the revenue decision? Should F&B pricing remain an operational responsibility, or become a shared responsibility between F&B, revenue, commercial and finance teams?
- Total guest value: Should hotels evaluate guests based not only on room revenue, but on their total contribution across rooms, F&B and other outlets?
- The hospitality paradox: How far can we optimize the economics of the guest experience before optimization itself begins to damage the experience?

Workshop: TRevPAR & The Profit Game: Learn to Make More Profitable Booking Decisions
Thijs Peters, Partner at Conventus Consultants — Speaker & Moderator
Every day, sales and revenue teams make decisions that directly impact profitability: which booking do you accept, which do you decline, and why? This session combines an in-depth keynote with an interactive business game that brings that reality to life.
KEYNOTE — FROM RevPAR TO TRevPAR
An in-depth, practical look at the shift from RevPAR to TRevPAR, with particular focus on the role MICE and events play in driving total revenue. Using hotel-specific examples and scenarios, including the rooms component, the session explores how to make better total-revenue decisions.
THE GAME — THE PROFIT GAME
An engaging business game where participants make strategic booking decisions under time pressure and with limited information. The exercise demonstrates how revenue, occupancy, margin and risk interact — and why chasing short-term revenue can sometimes hurt long-term profit.
